Brighton Burger Celebrates 7th Birthday!

Celebrations are in order for Brighton Burger, on Market Street, who are celebrating seven years, of serving up some of the city’s best burgers, this month!

We chatted to owner Julian Cook to talk pushing boundaries, better burgers and being voted the UK’s third best burger joint:

Hi Julian, why did you open Brighton Burger?

At 27 years old, having been a chef since I was 17, I thought it was about time I ran my own business. In 2012 there weren’t any decent burger joints in Brighton (Burger Off is in Hove!) pushing any boundaries. So I though I’d take what I’d learnt from working in various restaurants to the fast food sector and create some high quality burgers.

How have things changed for Brighton Burger over the last seven years?

I’m always pushing for better burgers, I’ll never sit back and say “I’m done”, so my burgers have improved year on year with a lot of experimentation. Also recently I’ve taken on the property next door to my original kitchen to provide a separate service area with some indoor seating.

What’s been your bestseller?

Our bestseller has to be the Real Ranch burger –  a steak patty with smoked streaky maple bacon, with BBQ sauce, lettuce and red onions, topped with applewood smoked cheddar, all in a bun.

Sounds delicious! Hard question, what’s your personal favourite?

It’s got to be the Smokestack (pictured); a steak patty topped with my own in house smoked pulled pork, applewood smoked cheddar and onion rings on homemade chilli peanut spread, red onions and raspberry jam.

What’s been your Brighton Burger highlight so far?

There have been a few, but being voted the third best burger joint in the U.K by TripAdvisor travellers for 2018 has to be the best – this was actually bought to my attention by an article in Apple News, or I wouldn’t have known!

That’s amazing! Before you go, what would you like the next seven years to hold?

Honestly, I’d just like to continue trading as I am. I’m not looking to expand, although maybe a venue with a larger indoor area and bigger kitchen would be nice.
